It was originally extracted in 1909 from the fungus Claviceps purpurea. Unlike common vitamins, humans and animals cannot produce this compound internally.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ergothioneine can only be taken in through food. It is produced naturally by specific fungi (particularly mushrooms), bacteria, and actinomycetes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">What makes ergothioneine different from thousands of other compounds you eat is that your body developed a specialized transporter protein for it called OCTN1 (also SLC22A4). This gives reason to believe it has evolutionary importance.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Why Scientists Consider It a &#8220;Longevity Vitamin&#8221;<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Ergothioneine was proposed as a &#8220;longevity vitamin&#8221; by Dr. Bruce Ames, one of the most frequently cited biochemists in history, in his seminal 2018 paper on the&nbsp;Triage Theory<sup>[1]<\/sup>. Concentrations vary significantly among species, with some varieties containing extraordinarily high amounts.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>The highest ergothioneine content is found in:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Golden Oyster mushrooms<\/strong>: 2,010 \u03bcg\/g (dry weight)<\/li>\n\n\n\n<li><strong>Porcini mushrooms<\/strong>: 1,812 \u03bcg\/g<\/li>\n\n\n\n<li><strong>King Oyster mushrooms<\/strong>: 1,720 \u03bcg\/g<\/li>\n\n\n\n<li><strong>Maitake mushrooms<\/strong>: 1,130 \u03bcg\/g<\/li>\n\n\n\n<li><strong>Shiitake mushrooms<\/strong>: High levels (values vary by growing conditions)<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Unlike plants and animals, mushrooms can naturally produce ergothioneine themselves. This makes them the most efficient dietary delivery system for obtaining meaningful amounts.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A single serving of oyster mushrooms can provide more ergothioneine than most people consume in an entire week from other sources.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Other Dietary Sources Worth Noting<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">While concentrations are considerably lower than in mushrooms, ergothioneine can also be found in:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Animal products:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Liver (especially kidney and red blood cells contain moderate amounts)<\/li>\n\n\n\n<li>These levels reflect the ergothioneine animals consumed from their own diets<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Legumes:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Black beans, kidney beans, and red beans (especially when grown with mycorrhizal fungi)<\/li>\n\n\n\n<li>A 2023 study found black beans showed up to 72 times more ergothioneine when grown with beneficial soil fungi<sup>[2]<\/sup><\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Grains and fermented foods:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Oat bran and wheat (particularly when cultivated with specific soil fungi)<\/li>\n\n\n\n<li>Tempeh, natto, miso, kimchi, and sauerkraut contain small amounts<\/li>\n\n\n\n<li>Spirulina contains relatively high amounts compared to other non-fungal sources<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Typical dietary intake ranges from 5-20 mg per day depending on mushroom consumption patterns.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">How Ergothioneine Works at the Cellular Level<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">In 2005 Dr. Dirk Gr\u00fcndemann, then at the University of Cologne, made a key discovery regarding the ergothioneine transporter OCTN1. He showed that OCTN1 transports ergothioneine with an efficiency that was nearly&nbsp;100-fold higher than for previously thought possible substrates<sup>[3]<\/sup>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The transporter binds ergothioneine with high affinity (Km of 21 \u03bcM). A 1 \u03bcM concentration of ergothioneine increased OCTN1 expression by as much as 600-fold in terms of its capacity to increase cellular uptake.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">This degree of specificity is quite extraordinary. Gr\u00fcndemann suggested naming OCTN1 the &#8220;ergothioneine transporter&#8221; (ETT) to reflect its predominant biological role.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">It Concentrates Where You Need It Most<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Once absorbed, ergothioneine is transported via OCTN1 and concentrates in tissues most vulnerable to oxidative stress:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Erythrocytes<\/strong> (red blood cells)<\/li>\n\n\n\n<li><strong>Eye lens<\/strong><\/li>\n\n\n\n<li><strong>Liver and kidney<\/strong><\/li>\n\n\n\n<li><strong>Brain<\/strong> (particularly mitochondria and nucleus)<\/li>\n\n\n\n<li><strong>Skin<\/strong><\/li>\n\n\n\n<li><strong>Bone marrow and semen<\/strong><\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">This preferential accumulation in stress-vulnerable tissues strongly supports its protective role. Your cells can maintain millimolar concentrations of ergothioneine in certain tissues, suggesting they actively work to retain it.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The compound persists in tissues with relatively long residence times. After supplementation stops, whole blood levels remain elevated for weeks.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">The Breakthrough NAD+ Discovery<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">One of the most significant recent discoveries came from 2024-2025 research that identified ergothioneine&#8217;s direct impact on <a href=\"https:\/\/www.jinfiniti.com\/blog\/practices-support-healthy-mitochondria\/\">mitochondrial function<\/a> and <a href=\"https:\/\/www.jinfiniti.com\/what-is-nad-plus\/\">NAD+<\/a> levels.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Research published in Cell Metabolism found that ergothioneine accumulates in muscle mitochondria during exercise training and binds to the enzyme 3-mercaptopyruvate sulfurtransferase (MPST)<sup>[4]<\/sup>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">This binding activates MPST, which produces hydrogen sulfide (H\u2082S) and pyruvate, boosting shows enhanced activity for NAD+ regeneration<\/li>\n\n\n\n<li>Elevated NAD+ supports muscle vascularization and stem cell health<\/li>\n<\/ol>\n\n\n\n<p class=\"wp-block-paragraph\">In middle-aged rats, three weeks of ergothioneine supplementation (20 mg\/kg) nearly doubled exercise endurance and running distance while increasing muscle mass and <a href=\"https:\/\/www.jinfiniti.com\/blog\/increase-nad-levels\/\">NAD+ levels<\/a><sup>[5]<\/sup>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&#8220;The antioxidant potential of ergothioneine itself is not strong because it doesn&#8217;t readily gain or lose electrons,&#8221; researchers noted. &#8220;Instead, ergothioneine functions as an indirect antioxidant by activating cellular defense
